The Story

Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. 

From the Domaine's own vines, it is located at the the plot of "Bas des Chapelots"

Soil: Clay on Kimmeridgian limestone

Average Vine Age: 35 years

Harvest: Hand picked

Yield: 55 hl/ha

Fermentation: 65% in stainless steel tank, 35% in 3-5 year-old oak barrels

Ageing: 65% in stainless steel vat and 35% in 3 to 5 year-old oak barrels on fine lees for 15-18 months


Tasting Notes

Colour: Bright yellow

Nose: Delicate, mineral and floral with notes of acacia flowers

Palate: Well balanced and structured with aromas of fresh white fruits such as peach with hints of vanilla

Finish: Long and persistent finish
