The Story
Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region.
The Preuses vines are located in the northern part of the Grand Cru area where the south-easterly aspect ensures morning sun. The available soil is shallow, producing a subtle and delicate wine with a light yellow colour.

Tasting Notes
Colour: Light, yellow-gold hue.
Nose: Floral, smoky, and mineral aromas. With age, additional flinty notes emerge alongside hints of spice, pollen, and honey.
Palate: Defined by finesse, delicacy, and minerality. Soft and gentle at the attack, gaining strength and depth as it evolves on the palate.
Finish: Persistent and structured, with a mineral backbone and refined elegance.

Excellent with fish and poultry in white sauce, shellfish, and foie gras.
