The Story

Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre, Irancy and Epineuil.  

Situated near Tonnerre, the vineyard is on a steep hill with a south-east exposure and, protected from the cold winds coming from the 'plateau de Langres'. This particularly good aspect creates a microclimate that produces high-quality wines.

Soil: Jurassic clay-limestone and Kimmeridgian marl

Average Vine Age: 25 years

Harvest: Hand picked

Yield: 60 hl/ha

Fermentation: Stainless steel tanks between 24°C and 28°C for 8-10 days

Ageing: Aged for 12 months in stainless steel tank


Tasting Notes

Colour: Deep purple

Nose: Fragnant with aromas of cherries, blueberries and blackberries

Palate: Well balanced and delicate with soft red fruit ripeness  

Finish: Beautiful length with a lingering freshness
