The Story
Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre, Irancy and Epineuil.
The vineyard is situated in an amphitheatre which protects it from northerly winds.
South / south-westerly exposure. This Irancy is a blend of Pinot Noir and Cesar, the oldest grape variety grown in France.

Fermentation: Stainless steel tanks between 20° and 28°C.
Ageing: Ageing of 16-18 months in stainless steel (85%) and in oak (15%).
Barrels: French oak, medium toasted
Tasting Notes
Colour: Light ruby colour
Nose: Intense red and black berries aromas with a hint of dried cherries.
Palate: Soft on the palate with a nice freshness, which gives good aromatic persistence of cherries. Fine tannins and delicate woody notes.
Finish: Long and pleasant finish
