The Story
Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. As well as producing top-quality Grand Cru and Premier Cru Chablis, it makes regional wines such as Côte d'Auxerre, Irancy and Epineuil.
The vineyard is situated in an amphitheatre which protects it from northerly winds.
South / south-westerly exposure.

Fermentation: Stainless steel tanks between 20° and 28°C.

Colour: Deep purple with violet hues
Nose: Perfumed with raspberry, strawberry and blackberries.
Palate: Spicy palate lightened with hints of raspberry and violet. Well balanced combining roundness and firmness.
