The Story

Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. 

Located on the outskirts of the Chablis appellation, these plots are characterized by very chalky Portlandian soils with little arable land that are based on high grounds, with stony areas of fairly light soil and eroded plateaus.

Soil: Portlandian Jurassic marl and limestone

Average Vine Age: 15-20 years

Harvest: Hand picked

Yield: 60 hl/ha

Fermentation: Fermentation in stainless steel tanks between 16-19°C

Ageing: Aged for 6-8 monthson its lees, in stainless steel tanks

Colour: Bright, pale yellow

Nose: Mineral with floral notes

Palate: Crisp, clean and delicate with citrus fruit aromas

Finish: Fresh mid-length finish
