The Story
Simonnet-Febvre has been producing sparkling wines with traditional method since 1840. It is the only Maison in Chablis to produce Crémant de Bourgogne.

Harvest: Handpicked, full bunches
Yield: 65 hl/ha
Fermentation: In Stainless steel tanks; traditional method (2nd fermentation in the bottle), dosage of 7g/l.
Ageing: Minimum of 24 months on the lees.
Barrels: No oak influence.
Tasting Notes:
Colour: Bright, pale gold.
Nose: A harmoniously balanced crémant with fine bubbles, a persistent foam and a wonderful length in the mouth. It is fresh and powerful on the nose with aromas of citrus.
Palate: Bright acidity with notes of citrus (lemon, lime, citron) and green apple.
Finish: Great length showing persistence and finesse.
Food Pairing
Enjoy chilled as an aperitif, as it comes, or with a liqueur such as crème de cassis.
