The Story

Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. 

Situated on the right bank of the Serein, extending from the Grand Crus, and exposed to the West / South-West, producing ample and harmonious wines with a subtle mineral note.

Soil: Kimmeridgian clay-limestone

Average Vine Age: 40 years

Harvest: Hand picked

Yield: 58 hl/ha

Fermentation: Fermentation in stainless steel tanks between 18-21°C

Ageing: Aged for 10-12 months on its lees - 25% in oak barrels and 75% in stainless steel tanks

Colour: Bright pale gold.

Nose: Ripe fruit and citrus with subtle mineral undertones

Palate: Generous and fresh, balancing richness with lively acidity

Finish: Long and saline, with a clean mineral lift
