The Story

Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region. 

This vineyard is located on the right bank of the Serein River. 'Mont de Milieu' takes its name from its historical role as the boundary between the former duchies of Burgundy and Champagne. This renowned Premier Cru benefits from a location similar to that of the nearby Grand Crus, with a South to south-Easterly exposure. This orientation provides higher than average temperatures and extended sunlight, contributing to consistently high quality.

Fermentation: Fermentation in stainless steel tanks between 18-20°C

Ageing: Aged for 12 months on its lees in stainless steel tanks


Tasting Notes

Colour: Pale gold with subtle green hue

Nose: Initially restrained with mineral and flinty notes. With age, it reveals aromas of candied fruit, vanilla, hazelnut and toasted bread.

Palate: Dry, firm, and structured with an austere profile when young. Gains richness and complexity over time.

Finish: Long and evolving with buttery notes and subtle hints of tobacco
