The Story
Simonnet-Febvre remains one of the oldest and most traditional Chablis producers in the region.
Les Clos is the most extensive Grand Cru plot, and is situated on top of a south/south-westerly facing hill. The depth of the soil produces a wine of consistent quality that always takes time to develop.

Fermentation: Fermented 65% in stainless steel vats and 35% in 3-5 year-old oak barrels.

Tasting Notes
Colour: Clear golden-green hue.
Nose: Evolving aromas of honey, citrus fruits, and warming spices such as cinnamon. Complex and layered, with a distinct mineral character.
Palate: Concentrated and powerful, with rich flavours of citrus, honey, and spice carried by firm minerality. Initially restrained, the wine opens beautifully with time, revealing remarkable depth and structure.
Finish: Long, complex, and persistent, marked by richness, minerality, and excellent ageing potential.
