The Story
Simonnet-Febvre has been producing sparkling wines with traditional method since 1840. It is the only Maison in Chablis to produce Crémant de Bourgogne.

Soil: Jurassic marl and limestone.
Average Vine Age: 20 years
Harvest: Handpicked, full bunches
Yield: 65 hl/ha
Fermentation: Traditional method (2nd fermentation in the bottle), dosage of 6g/l.
Ageing: 24 months "sur lattes"
Barrels: No oak influence.
Tasting Notes:
Colour: Light gold with a shade of orange-pink.
Nose: Aromas of ripe apple, red fruits and orange peel.
Palate: Deep flavours of candied fruits, meringue and toasted almonds.
Finish: Long and rich finish, with a fine, deliicate mousse.
