The Story
The Pastures Collection is Pyramid Valley view of the three great South Island appellations of New Zealand - North Canterbury, Central Otago and Marlborough. The collection includes a Chardonnay and Pinot Noir from North Canterbury and a Pinot Noir from Central Otago, somewhat like the village wines of Burgundy. And, like Burgundy and the Loire, Pyramid Valley celebrate single vineyard and small block parcels named after the heritage of the vineyard, culture and people.
Vineyard & Winemaking
Selectively hand-picked fruit from Sam and Mandy Weaver’s hillside, biodynamic, Churton Vineyard that sits at 200m above sea level between the Waihopai and Omaka Valleys. A parcel from the north east facing slope on loess above a clay subsoil.
Hand sorted and whole bunch pressed into a concrete Tulipe. Fermented with the indigenous yeast from the fruit and winery and left on lees for 8 months and then racked to old puncheon on light lees for a further 10 months. Bottled iunfined and unfiltered.
Tasting Notes:
A delicate haze shimmers in the glass, glowing with hints of green and lemon gold. The nose is an alluring weave of ripe tropical fruits, lifted by a whisper of wild meadow grass. On the palate, layers of lush, sun-drenched fruit unfurl over a silken texture, driven by an undercurrent of vibrant energy. This is Sauvignon Blanc in its most beguiling form—poised to evolve with grace over the next decade. Sublime alongside freshly-caught fish and a salad that bursts with colour and crunch.
